Lamp Cake is the favorite fried snack of people in the west of Fujian province and its name derives from its appearance which is similar to a type of flat lamp in ancient China. To make lamp cakes, first soak soy beans in cool water for about two hours, then ground them and addsalt and chopped scallions. Pour the mixture into a spoon and then place the contents into hot oil. Within ten seconds, the mixture will swell into a ball and float up. Fry until it turns a golden color and it becomes crispy.Local people sometimes call this snack "magic cake" as the liquid mixture is transformed quickly when poured into the hot oil.
